We made vegan pudding!

Tonight's dinner was Havana Black Beans and Cilantro Lime Rice. Both recipes were from The Whole Foods Cookbook. I couldn't believe the amount of greens that went into the rice. Spinach, Cilantro, Green Onion. Delicious!

The beans were cooked in coconut milk and topped with cilantro and green onion.

For dessert, we attempted a chocolate pudding. I made it with rice milk, agave nectar, and cocoa. It was smooth and creamy. Not too sweet at all.
